This specialty Belgian ale gets a dose of Chanterelle mushroom extract made from a half pound of mushrooms soaked in vodka. A very delicate and ethereal fruitiness is instilled when the extract is added during bottling/kegging.

In Gordon Strong’s book he recommends putting [left over hops] in glass jars, purging with c02 and freezing. He says they will last better than a year and keep their freshness that way.
